Christmas came early!

My mother just bought tickets for our family and I am so excited, I can't stand it! I've been wanting to see them for ages. Now if only it would snow, my Christmas would be complete!

Mashed cauliflower
A very tasty substitute for spuds....
1 head cauliflower
2 cloves garlic
3 (or more) Tbl butter
salt and pepper to taste
Cut up cauliflower and cook (either microwave or stove top) until very soft.
Add pressed garlic and butter to cauliflower
Use and blender or food processor to blend/process until smooth
Salt and pepper to taste
Voila!

Norman Rockwell
The Norman Rockwell Museum in Stockbridge, MA is well worth the 2 1/2 hour drive from Boston.
Rockwell's "best studio yet" and his last.
All 323 Saturday Evening Post covers are on exhibit, organized chronologically.
"The problem we all live with" was my favorite. Along with the painting, the dress worn by the child and a letter to the editor (from someone deeply moved by the image) were on display. Very cool stuff.

Cauliflower Rice
Strange name, I know. But soooo tasty.
1 head cauliflower, grated
1 yellow onion, chopped
2 cloves garlic, minced
2T good quality EVOO (I find the flavor really enhances this dish)
salt and pepper to taste
Saute onion, garlic and olive oil until onions are translucent
Add grated cauliflower, stirring frequently (takes about 5 minutes to cook)
Salt and pepper to taste
YUM!

Paleo carrot muffins
Sooooo yummy. Trust me.
Paleo carrot muffins
2 cups almond flour
2 tsp baking soda
1 tsp sea salt
2 Tbl cinnamon
2 Tbl nutmeg
1 cup dates, pitted
3 ripe bananas
3 eggs
1 tsp apple cider vinegar
1/8 cup coconut oil, melted
1 cup carrots, grated
1 cup raisins
1/2 cup chopped pecans or walnuts
muffin paper liners
Preheat oven to 350 degrees
In a small bowl, combine flour, baking soda, salt, cinnamon, and nutmeg
In a food processor, combine dates, bananas, eggs, vinegar, and oil
Transfer both mixtures to a large bowl and blend until completely combined
Fold in carrots, raisins, and nuts
Scoop mixture into paper lined muffin tin
Bake for 25 minutes
ENJOY!!!!

Paleo brownies
Paleo brownies
1jar Justin's Nut butter, any flavor will do. If you use chocolate, omit the cocoa from below.
1 egg
1 Tbl vanilla
1/2 cup maple syrup
1/2 cup cocoa powder
1 tsp salt
1/2 tsp baking soda
1/2 cup Enjoy Life semi-sweet mini chocolate chips
Preheat oven to 325 degrees
Beat egg
Add vanilla and maple syrup
Stir in dry ingredients
Add mini chocolate chips
Grease 9x13 pan (I used this)
Pour in batter
Bake for 25 minutes
Cool before cutting

Company's coming!!
I have a dear friend visiting this weekend from the "big city".
